Up Beet Salad! So this is probably the first time I have EVER had beets in my salad. And can I just tell you they are sweet. Beets are sweet. If someone would of told me Beets were sweet I would have looked at them like they were crazy. They do have a bit of an earthy taste but I kind of like that about beets. We all have a rugged side to us and a sweet side. So I feel like beets are relateable:) Ha Ha. The avocados I used were so ripe and at their peak flavor. There is nothing better than a perfectly ripe Avocado.
Salad--Mixed baby greens with baby Kale, chopped beets, chopped carrots, and chopped avocadoes.
Dressing--balsamic vinegar, and olive oil (not shown on salad)
Did you use raw beets?

ReplyDeleteI have never liked beets until I had them raw and grated in a salad! So yummy. Also having the greens ofthe beet sautéd with other greens, salt, oil and garlic is delicious!

ReplyDeleteyeah I think grated beets would be even better! Also I did not realize you could cook the greens of the beets. But why not?
